Hi there! My name is Bekah and together, with my husband Akim (pronounced Gim), we are trying to create a little space on the web to document our passion for plant-based whole foods.
Why Plenty? For us it is the rose colored glasses from which we choose to view our lives, especially in relation to food. We rarely think about what we don’t eat, but instead focus on the plenty that fills our plates. We have a tiny kitchen (and apartment in general), but we love to focus on the plenty we are able to create in our space. We might have more time than some, but we certainly have less than others. However, when we adjust priorities to focus on the things that truly matter to us, it’s amazing what we are able to fit into our schedules. I always hear people express concern about the expense involved in eating healthy, but as we shifted our diets to include truly healthful foods (instead of “organic junk food”), it was remarkable to see our grocery bill plummet. And plenty in my bank account is certainly something I will stand behind! The list could go on, but you get the point. Look around your life and start focusing on the plenty today!
